Bacon Jam:

  • 1 1/2 lb. (24 oz)bacon, chopped
  • 1 Tbsp(15 mL) butter
  • 2 small yellow onions
  • 1/2 cup (120 mL) Jack Daniels Whiskey
  • 1/2 cup (120 mL) honey
  • 1 1/2 Tbsp (22.5 mL) balsamic vinegar
  • Pinch cayenne pepper

  • 1 lb.(16 oz) lean ground beef
  • 1 tsp(5 mL) salt
  • 1 tbsp(15 mL) Worcestershire sauce

To Assemble:

  • 1 Tbsp(15 mL) butter
  • 4 eggs
  • 4 slices sharp cheddar
  • 4 English muffins, toasted and buttered

Bacon Jam:

  1. Cook the bacon in a heavy pan over medium-high heat until the bacon is crispy. Remove the bacon to a plate  and set aside. Drain the fat through a colander to a bowl.
  2. Put the bacon fat back into the pan and add butter and onions. Cook until the onions are softened.
  3. Add bourbon and honey. Turn heat to high and bring to a boil, stirring often. Add in vinegar.
  4. Add in bacon back into the pan and reduce the heat to medium-low. Reduce until caramelized.
  5. Season with cayenne pepper.

  1. In a large bowl mix the beef, salt and Worcestershire sauce. Form into four patties.
  2. Heat a skillet over medium-high heat and melt a little butter. Add patties and cook until seared. Flip, and cook the other side until the patties are fully cooked through. Add cheese on top and cover the pan until the cheese has melted.

  1. Fry the eggs to your liking.
  2. On a plate, put the eggs on the bottom piece of the English muffin, followed by the patty and a generous helping of bacon-jam. Serve and enjoy!
