Holiday Honey Nut Treats

Honey Roasted Spicy Nuts

1 lb. (.45 kg.) raw mixed shelled nuts
1/3 cup (113 g.) liquid honey
2 tbsp (30 g.) butter
2 tsp (13 g.) salt

1 tsp(5 ml.) vanilla extract
1/4 tsp (0.6 g.)cinnamon
1/8 tsp (0.3 g.) nutmeg

*Note for persons with nut allergies consider using cooked garbanzo beans, soy nuts or pumpkin seeds.

honey-roasted-mixed-nutsSet oven to 325 °F (160°C). Line a baking sheet with parchment paper or aluminum foil coated with oil or non-stick cooking spray.
Melt the butter then mix with the liquid honey, vanilla, cinnamon, nutmeg and 1 tsp (6.5 g.) salt.
Add the nuts to the mix and stir until well coated. Pour them all onto the cookie sheet ensuring they are spread evenly.
Bake for 20 minutes, stirring frequently to prevent burning.
Once they are all golden brown remove, and allow to cool for a few minutes then sprinkle the remaining 1 tsp (6.5 g.) of salt on them. As they cool try to break up clumps. If you wish to prevent them sticking together even more, sprinkle a small amount of granulated sugar on them at the same time as the salt.
Store in an air tight container at room temperature.

Honey Roasted Hot & Spicy Nuts

1 lb. (.45 kg.) raw mixed shelled nuts
1/3 cup (113 g.) liquid honey
2 tbsp (30 g.) butter

2 tsp (13 g.) salt

¾ tsp (5 g.) fresh ground black pepper
½ Tsp (1.2 g.) ground cumin
½ tsp (1.2 g.) ground coriander
½ tsp (1.2 g.) paprika
1/8 tsp (0.3 g) cayenne pepper

Same directions as above, using the different spices.
