Honey Almond Chews
1 Tbsp (15 g) candied ginger (optional)
2 C (185 g) sliced almonds or chopped walnuts
1 C. (340 g) honey
½ C. (100 g) sugar
Preheat oven to 350°F (177°C)
Lightly grease an 8 in. x 8 in. baking pan. Set aside. If using candied ginger, grind in a blender or food processor until finely minced. Spread nuts on a baking sheet and toast carefully in the oven for 8 to 10 minutes, or until the nuts are pale golden and give off a toasty aroma. In a heavy bottomed pan over medium heat, combine honey and sugar. (The sugar is necessary to harden the chews – use less if you want them gooey). Heat, stirring, until sugar dissolves, which will be about 8 to 10 minutes.
Add nuts and ginger, and continue cooking, stirring frequently, until mixture turns a deep golden colour and registers 280°F (138°) on a candy thermometer. This can take 15 minutes or more. Pour carefully into the oiled pan, spreading in a thin (1/2 in. (1.3 cm)) layer. Score into small squares with a sharp knife. When cold, break them into squares and store in an airtight container.
