Honey and Lemon Thyme Roasted Carrots

Serves: 2

Ingredients:

1 lb (500g) Garden Fresh Baby Carrots
2 tbsp(30ml) Extra Virgin Olive Oil
¼ Cup (60 ml) Honey
1 tbsp(15ml) Lemon Juice
6 Sprigs Thyme
Sea Salt and Pepper to Taste

Instructions:

Preheat oven to 200c(400f).

Place the carrots in a bowl and toss with oil, honey, lemon juice, thyme, salt and pepper.
Spread out on a baking tray.
Roast for 30min or until the carrots are tender.
