Honey Harvest Meatloaf

11/2 lb. (680 g.) ground beef
1 egg
¼ C (30 g.) fine breadcrumbs
2 Tbsp (28g.) honey
2 large garlic cloves, minced

1 small onion, chopped

1 C. (120 g.) shredded cheddar cheese
½ C. (60 g.) shredded carrot
¼ tsp. (500 mg.) black pepper
¼ C. (30 g.) ketchup
1 Tbsp. (14 g.) prepared Dijon mustard

MeatloafPreheat oven to 350°F (175°C).
Whisk the egg, half of the honey (1Tbsp) and ground pepper into a large bowl. Add the breadcrumbs, then the ground beef, onion, garlic, cheese and carrot, mix thoroughly. Place the mixture into a greased loaf pan. Combine the last half of the honey (1 Tbsp), ketchup and mustard in a small bowl then spread it over the mixture.

Bake uncovered approximately 11/4 to 11/2 hr., or when a thermometer shows the centre to be at least 160°F (70°C).
Let it stand at least 5 min. before serving.
