Honey & Orange Glazed Sweet Potatoes
2 Tbsp (30 gm.) unsalted butter
Salt & pepper to taste
2 lb (.9 Kg.) sweet potatoes peeled, cut into bite size lengths or chunks
Melt the butter. In a medium sized bowl combine melted butter, honey, orange juice and spices.
Add the sweet potato pieces and toss to coat well.
Arrange the coated sweet potatoes on the baking dish in a single layer, sprinkle with salt and pepper.
Stir and baste potatoes regularly and roast until they are fork- tender and browned, approximately 45-55 minutes. Serve immediately.
