Honey Sesame Chicken
|6-8 boneless, skinless chicken thighs or 4 chicken breasts
1/2 C. (60 g) diced onion
2 cloves garlic, minced
1/2 C. (180 g) honey
1/4 C. (80 ml) tomato paste
1/2 C. (120 ml) soy sauce
2 Tbsp (15 ml) sesame oil
Serve with rice and steamed vegetables.
Lightly grease the crock pot and place chicken inside.
In a medium bowl, combine onion, garlic, honey, tomato paste, soy sauce, pineapple, oil and red pepper flakes. Pour over chicken. Cook on low for 3-4 hours, or high for 2 hours.
Remove chicken to a cutting board, leaving sauce. Shred chicken into bite-sized pieces; set aside.
In a small bowl, dissolve the cornstarch into the water then add to crock pot. Stir thoroughly to combine with sauce. Cover and cook sauce on high for ten more minutes, or until slightly thickened.
If served with cooked rice, top rice with chicken and spoon sauce over top. Sprinkle evenly with sesame seeds and chopped green onions.
