Peanut Butter Honey Apple Crisp

Filling
4 C (500g) Granny Smith Apples peeled, sliced
2/3 C (160 ml) creamy peanut butter
2 Tbsp (42g) honey
2 tsp. (12g) cinnamon
Topping
21/2 C (315g) rolled oats
½ C (180g) honey
2 Tbsp (30ml) melted butter
2 tsp (18g) cinnamon

Combine the honey and peanut butter and warm up slightly in the microwave to make them runny. Combine with the apple slices in a large bowl, sprinkle on the cinnamon and stir it in.
Place the apple mixture in a well-greased oven proof dish.
In a small bowl combine the rolled oats and cinnamon, then the butter and honey. Mix well.
Place the topping on the apple mixture.
Bake 30 to 40 minutes until the apples are tender.
Serve with ice cream.
