Red Cabbage Tossed in Honey and Caraway

1 red cabbage (about 1lb or 500 g.)
¼ C. ( 60 ml.) butter
1 onion, sliced
½ C. (118 ml.) golden raisins
11/2 Tbsp (22 ml.) Chinook Honey
1 Tbsp (15 ml.) Chinook Mead Vinegar
1  tsp.(5 ml.) caraway seeds, toasted

Cut the cabbage into ½ inch (1.27 cm.) shreds. In a saucepan or deep frying pan, melt the butter and sauté the onion over medium heat for 2-3 minutes until transparent.

Add the raisins to the pan and toss through the butter. Stir in the honey, mixing well. Add the shredded cabbage and the mead vinegar. Stir in the toasted caraway seeds until mixed through.

Turn the heat down to low, cover and steam the red cabbage for 10 – 15 minutes until it is just tender, tossing once or twice during the cooking time. Serve immediately.  (Serves 4)
