Salad with Honey Roasted Pears & Goat Cheese

– 2-3 cups (500-750 mL) of your favourite green salad
– 1 pear, fresh but not too ripe
– sprinkle of kosher salt and black pepper
– drizzle of Chinook Honey, flavour of your choice
– goat cheese, as desired
– roasted nuts, such as walnuts, as desired

Salad Honey Roasted PearPreheat oven to 375 F (190 C). Slice pear in half. Core with a melon baller. Halve each half to make quarters, then slice each quarter a few times to make a fan.
Place the pear slices on a parchment-lined baking sheet and season with salt and pepper. Drizzle with honey and roast in the oven until honey is caramellike.
Put greens in a bowl and sprinkle goat cheese and nuts onto the salads. Top with pear slices. Dress with a light vinaigrette.

Makes 2 servings.
