Salmon with Honey Balsamic Glaze
6 individual salmon filets with skin
½ C. (180 g.) honey
Mix together the salt, pepper and mustard. Cut halfway through the salmon filets in 6 or 8 places to help the seasoning and glaze penetrate. Season the flesh side of the filets. Place them skin side down on a well-greased, shallow baking pan. Roast in the oven at 500°F (260°C) or on a hot grill for 5 minutes. Remove from heat and make the glaze by mixing the honey, balsamic vinegar, olive oil and garlic. Drizzle 1 Tbsp. (15 ml.) over each filet. Roast at 500°F (260°C) or on a hot grill for another 3 to 5 minutes. Remove to your serving plates and drizzle the rest of the glaze over each filet.
This recipe is also very good if using cedar planks to cook the salmon on the grill.
