With those lazy days of summer just around the corner, this is the perfect accompaniment to any light lunch or dinner (or perhaps a picnic). You’ll find it refreshing and delicious as well as healthy …. and very little prep time!
1/2 C (50 g) sliced almonds
1/2 C (120 ml) plain yogurt
2 Tbsps (30 ml) vegetable oil
2 Tbsps (30 ml) Alberta Multi Floral honey
1 Tbsp (15 ml) apple cider vinegar
1 Tsp (5 ml) Dijon mustard
4 C (.6 kg) red seedless grapes, sliced in half
2 C (.4 kg) apples, cored and chopped
1 C (.1 kg) celery, sliced
Toast the almonds, let cool.
In a mixing bowl, whisk together yogurt, oil, honey, vinegar and mustard until smooth.
With a rubber spatula, gently fold in almonds, grapes, apples and celery.
Note: For an alternate honey and to add a little more flavor – try Orange Blossom Honey
