Sweet & Sour Pineapple Turkey

4C (100 ml) diced left-over turkey
2 T. (15 ml.) soy sauce
1 14 oz. (398 ml.)can diced pineapple
1 T (15 ml.) vegetable oil
1 tsp. (2 g.) grated gingerroot
3+ med cloves garlic, chopped

2 T. (15 ml.) rice vinegar
¼ tsp. (7 g.) cayenne pepper
11/2 T (12 g.) cornstarch or flour
½ C. (125 ml.)traditional mead or white wine
2 T. (15 ml.) honey

  1. IMG_1284- Sweet & Sour Pinapple TurkeyMarinate the turkey in 1 T. (8 ml.) of soy sauce for 10 min. stirring to coat all of it.
  2. In a large frying pan on medium heat brown the garlic and gingerroot in the vegetable oil. Add the turkey and pineapple and heat 5 to 8 minutes until it’s thoroughly warm.
  3. In a bowl combine the mead, reserved pineapple juice, remaining soy sauce, vinegar, cayenne pepper and honey.
  4. Add the cornstarch (or flour) to the liquid ingredients, blending well.
  5. Pour the liquid ingredients over the turkey mixture then stir constantly until the sauce thickens.
  6. Serve over noodles or rice, with stir fried vegetables.
